Paleo Chicken Curry Salad Sandwiches
Today I’m putting it all together: The Roasted Lemon Herb Chicken, The Crazy Easy, Paleo Mayo, The Paleo Bread and turning it all into some delicious Paleo Chicken Curry Salad Sandwiches.
This chicken curry salad has become a staple for me. I don’t always eat it on a sandwich. It’s actually totally delicious on it’s own. Maybe put a few slices of avocado on it and some potato (or not, tbh) and that’s a hearty meal. I like to make a big batch of it and then eat it through the week. I find that it’s really helpful for me take the time in the beginning of the week to make a big batch of something. That way when I’m running short on time later in the week I already have something made I can eat before I turn into a hangry monster of destruction.
Make good life choices. Do this thing.
Curry mayo is easy to make. You just mix curry powder into mayo and voilà!
- 1 Cabbage
- 2-4 Scallions
- 1 bunch Dill (or other herb like cilantro, basil, or parsley)
- handful (or two) of roasted Cashews
- Roasted Chicken (picked off the bone and ripped into pieces)
- ½ to 1 cup Currants
- ½ to 1 cup Mayo
- 2-4 Tbs Curry Powder
- Slices of Bread
- Lettuce (for the sandwich)
- Feel free to add other herbs and more or less of anything to taste. I've started adding pressed garlic in there as well.
- Thinly slice/dice: Cabbage (whole or half depending on the size of it), 2-4 Scallions, Dill (or other herb like cilantro, basil, or parsley)
- Add it all to a large bowl and mix
- Add chicken, roasted cashews and currants. Mix well.
- Add 2-4 Tbs of curry powder to ½-1 cup of mayo and mix
- Scoop curry mayo into bowl, mix well
- Put a few pieces of lettuce on two slices of bread.
- Plop a scoop of chicken curry salad on there.
- And eat it.
