Paleo Samoa Donuts
Samoa, as in the Girl Scout cookies. Only donuts. And paleo. And grain-free, gluten-free, dairy-free, cane sugar-free and soy-free (always and of course).
This recipe is from The Urban Poser. She is a magical wizard genius and no one can tell me otherwise.
So, you want to make yourself some adorable Paleo Samoa Donuts. The best and most entertaining way to learn how is to watch the video. But if you can’t watch it right now and want a sneak peak at what’s coming, here are you go:
First, congratulate yourself. You may have dietary restrictions, but you are about to make and then eat some delicious tiny donuts. Why? Because you want to. But WHY? Because YOU CAN.
You are an empowered human being who is grabbing life by the oven mitt. You are taking your dreams of tiny delicious Samoa Donuts and making them a reality.
Next, make those coconut flakes fine and toast them. Be sure to leave yourself enough time to pitch your amazing and brilliant self help book to Random House about wiggle room and how you’re going to Create The Wiggle Room In Your Life In 9 3 steps.
Using that donut maker you never thought you’d use, make these donuts.
While your tiny and adorable donuts are cooling, melt down your baking chocolate so you can sweeten it with honey.
then dip your tiny and adorable donuts in chocolate. Maybe put them down on parchment paper. That chocolate did not come up as easily as I would have liked. But they look GREAT.
Then, because the caramel is taking longer than you thought, smear more chocolate on the donuts. Sprinkle your toasted coconut flakes on top and think to yourself, wow! These are good! Who needs paleo, dairy-free honey caramel? Not me!
I mean, these donuts are pretty adorable without it. And they’re TASTY.
But you’re no quitter. You’re not giving up on that caramel. No matter what all it’s friends say!
Which is good. Because when you put it all together these suckers are delicious.
- DONUTS
- 2½ cups blanched almond flour
- ½ teaspoon baking soda
- Slightly less than ½ teaspoon salt
- 6 tablespoons raw honey
- ¼ cup coconut oil, softened or liquid
- 1 tablespoon vanilla
- 1 teaspoon Lemon juice
- 3 whole large room temp eggs
- CHOCOLATE
- 4 ounces dark baking chocolate
- 3 tablespoons raw honey
- COCONUT
- 6 tablespoons toasted fine coconut flakes
- DONUTS
- Preheat your mini donut making machine.
- In a large bowl, mix together the almond flour, baking soda and salt.
- combine the honey, oil, vanilla, lemon juice and eggs.
- Mix till combined.
- Add about 2 tablespoons of batter to each mould in the donut machine or scoop the batter into a ziplock bag. Snip the end off of one of the corners with a scissors. Squeeze batter into moulds. Follow your donut machine's instructions. Mine was 2 minutes, flip them and 1 more minute.
- Remove donuts and let cool on a wire rack.
- CHOCOLATE
- Melt the chocolate and honey in a double boiler over medium heat until both are melted and combined
- COCONUT
- Toast Coconut flakes in the oven at 325°F
- ASSEMBLY
- Dip the donuts the chocolate. Smear the chocolate on top. At this point, you can either sprinkle with the coconut flakes and be done and eat it as is, or using the paleo dairy-free honey caramel, drip the caramel on top and THEN sprinkle the coconut flakes on top. Either way. You will win.
- Eat your heart out <3
