Super Simple Paleo Meringue + Hello! I’m Back!
I’ve missed you all and I’m so happy to be back, making delicious things!
I’ve been busy the last few months working hard on a few other things that have taken me away from LTK:
- My Art and Bravery Project on instagram.
- I’m writing a book! It’s called Learning To Eat. I did a talk about it recently, I’ll post the video from that soon. I’m really hoping that you like it.
- I shot, directed and edited a short documentary called Sensitive Beast about leadership, horse whispering, and sensitivity with Ane Axford.
- I’ve created and have been madly playtesting a social justice card game called Your Privilege Is Showing (website incoming but not up now) focusing on sexism, racism and privilege.
It’s been a lot. I’ve been pushing myself in new ways as I learn new things. It’s been great AND I’m really glad to be back working on Lillian’s Test Kitchen.
Speaking of…
You know what’s, weirdly, not hard? Making meringue. It’s actually really easy. And if you’re into light, fluffy and maple, it’s delicious.
Elana’s Pantry came up with this insanely easy recipe. I mean, of course she did. She’s the queen of simple and delicious.
- 2 egg whites
- ½ cup maple syrup
- a pinch of salt/a smidgen of lemon juice/a pinch of cream of tartar
- put all the ingredients in a pot on the stove.
- set heat to low.
- beat the crap out of it with a hand blender until it's fluffy and can stand up on it's own.
- Do something with it. You can make cookies, you can put it on pie, you can put it in stuff, do what you want. The world is your meringue flavored oyster.
